The acronym U.V.A.M. is an acronym that means Winemakers Union of the countryside area of Marsala. At the beginning the grapes were carriedfrom the grapevines to the factory inside the vats on carts that were pulled by mules. The grapes were pressed and then passed through the wine presses after that, the must was put in big wooden barrels, in order to let it ferment. The ancient tradition of the Wine Cellar, its deep connection with the territory and the people who guard it and are expert of it are basedon the strain and sweat of the farmers who founded it. From the first experiences and always following rigorously the tradition, a path began that was based on the mechanization of the processes and on the constant improvement of the wine-making techniques. Abandoned the ancient domicile, the Uvam settled in the production area among the vineyards, just on the street that joins Marsala and Salemi, and it has been equipped with the most modern gears. Through the static settling of the must, using the most advanced wine-making techniques, cold fermented red and white wines are produced. They are of high quality and can accompany and intensify, through their aromas and flavours, any kind of food.
Four are the wines that are the distinctive elements of the wine production of the Cantina Sociale Uvam in Marsala, the Sirah, the Grillo, the Nero d’Avola and the Chardonnay. The Sirah is a ruby red wine, with violet shades. With an intense and lasting aroma with important spicy marks and hot, harmonic and equilibrated flavour, it complies well with meat dishes, roasts, game in general and aged cheese. The Grillo is a characteristic straw yellow wine. Thanks to an intense and persistent aroma, with flower and fruity marks and to a well-equilibrated flavour among the dry, the full and the soft, it complies perfectly with fish dishes and light entrées.
The Nero d’Avola is a ruby red wine, with an excellent aromatic legacy composed of intense fruity flower and spicy sensations with an equilibrated flavour and it complies with meat based dishes, roasts and game in general. In the end the Chardonnay is a straw yellow, strong and crystal clear wine. Itpresents flower scents and intense, persistent fruits, that have apple sensations with a dry, soft and well equilibrated flavour. It complies perfectly with fish, crustaceans and light entrées.
